Paleo Crustless Mini-Quiches

This is one of my personal favorites!  Enjoy!

 

Ingredients

1lb breakfast sausage

1 dozen omega eggs

1 cup finely diced zucchini

1/2 cup finely diced red bell pepper

1/2 cup finely diced orange bell pepper

1/2 cup finely diced onion

4 stalks asparagus – finely chopped

1 cup chopped fresh spinach

1/3 cup unsweetened original almond milk

1 tbs Mrs. Dash

1 tsp seasoned salt (optional)

Directions

Preheat oven to 350 degrees.

Brown Sausage.  Combine sausage with veggies and seasoning and whisked eggs.

Use a 1/4 cup measuring cup to divvy out mixture into muffin tin lined with cupcake papers.  Fill to just below top of paper.

Bake at 350 degrees for 20 – 25 minutes or until light golden brown.

Makes 21 crustless mini quiches.  Put in zip-lock bag and refrigerate for later use as leftovers or a snack.
